Ingredients
280 g/ml water or milk
30 g fresh Yeast, 1 sachet or T of dry Yeast
20 g/ml oil
1/2 t salt
500 g Bakers Flour - plain flour
Method
1. Place water/milk, yeast, oil and salt into bowl. Mix 5 seconds on speed 3.
2. Add the flour. Continue mixing for 6 seconds on speed 8.
3. Set dial to closed lid position, knead the dough for 2 min on interval speed. Or in ordinary mixer, fix dough hook and knead for 5-10 min.
4. Transfer the dough to a floured bowl and let rise to double quantity - about 30 min.
5. Divide dough into 4 balls, rest for 15 min. Form pizzas and add favourite toppings.
6. Bake in hot oven - 200-220C until cooked, about 15 min depending on toppings used and thickness of dough base.
May refrigerate or freeze dough for later use.

Pizza and the Grandchildren
When asking the grandchildren one day, "What would they like to eat?", "Pizza" was the prompt reply. Well, we could make up the dough quickly enough, but what about toppings? From the suggestions of brie, smoked salmon, salami, cheese, olives, pineapple, ham, red capsicum, tomato paste, chicken - the fridge held salami, cheese, ham, red capsicum, homemade tomato sauce. Within the hour, we had made 4 pizzas to match desired taste buds, with each child putting on their available favorites.
